Another gem from Mr. Prakashan Balaram—"Heisenberg" of the coffee industry—who always seems to come up with innovative processing methods. "Piña" in Spanish and "Ananas" in Hindi are the inspirations for this coffee's name.
This is an experimental lot where only the ripest cherries are picked and triple-washed in flotation tanks to remove any grit or leaves. Defective cherries floating on the top are skimmed off. Once this process is completed, the cherries are fermented for up to 72 hours, with pineapple being added throughout this time. The cherries are then transferred onto raised beds to dry. The outcome is an insanely fruity, sweet, and juicy cup disguised as coffee.
The result is a cup that’s vibrant, juicy, and complex, offering a rich sensory experience and a celebration of shared passion between the farmer and the roaster.
