Introducing 90 Hour, the final coffee in our Number Five Series, sourced from the treasured Riverdale Estate from Yercaud, India. Where our passion for craftsmanship and unmatched coffee collaborations create something truly meaningful!
This coffee begins with handpicked cherries, ensuring only the finest beans are selected. Defective beans are sorted out, and the cherries are floated in spring water from the estate to remove any underdeveloped beans. They are then placed in a purpose-built fermentation room for a carefully monitored 90-hour process. After fermentation, the cherries are sun-dried on raised beds for 25–30 days, allowing moisture to evaporate gradually. These African-style raised beds facilitate efficient drainage and promote proper airflow for even drying.
With our experience at Riverdale Estate, Savorworks understands this coffee's character, allowing us to craft the perfect profile. We chose a medium-light roast to bring out delightful flavors: floral aromas of lily, sweet red apple, refreshing citrus notes of petite tangerine, and a lingering taste of dried goji berries.
